It was another tiring day at work, but we we wanted to eat in and wanted a simple but filling Iftar. M has vowed off of fried food since he heard Mufti Ismail Menk mention in a lecture how fried things are the worst things to have on an empty stomach, (yes, that’s the authority figure he needed to hear from in order to have mercy on his paunch).
It’s true though. Greasy foods make you feel lethargic and make you want to sleep through taraweehs. Healthy and nutritious is the way to go. But there’s no reason why healthy and nutritious can’t at least taste unhealthy and delicious. SO, I saw a loaf of multigrain bread in my fridge, I saw some yogurt, I saw an avocado that had perfectly ripened, and laziness ingenuity struck: avocado and egg salad sandwiches!
I really love egg salad. But I REALLY dislike mayonnaise. It’s sickeningly high in saturated fats and cholesterol. Even when we eat out, if we’re ordering burgers, we always tell them to hold the mayo. At home, I always use Greek yogurt instead of mayo and if there’s any difference at all, it’s that the Greek yogurt actually tastes way better than mayonnaise- well, store-bought mayonnaise at least!
Heres what I did:
Ingredients:
- 3 hardboiled eggs
- The juice and zest of 1 lime (This gives it that extra kick of freshness)
- 1 ripe avocado, cubed.
- 1/3 cup low fat Greek yogurt
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- lettuce
- 1/2 teaspoon whole grain mustard
Method:
- Mash the eggs in a bowl.
- Mix in the yogurt, olive oil, mustard, salt, pepper, lime juice and zest.
- Mix the avocado in last, as you want the cubes to hold up as much as they can and not cream.
- Slap a spoon of this mix onto a slice of bread. Place a leaf of lettuce on top. If you’d rather, then you can always shred the lettuce and fold it into the egg salad mixture before you’ve added the avocados in.
- Cover with another slice of bread. Cut in half diagonally. And you’re done. Serve with sauce of choice. M likes barbecue sauce. I like chili garlic sauce or Nando’s peri peri sauce.
